RefoskTOPBRIČ REFOSCO

This very special red wine, extremely rich in red colours and with unique acids, is classified as an indigenous wine variety of the Slovenian Istria. Its colour is an intensive ruby red with fresh shades of ripe cherries. The aroma is predominately gentle fragrant wild fruits intertwined with freshness and joyfulness. The flavour is predominantly fruity with plenty of freshness that is wonderfully combined with gentle tannins into a harmonic, full and unique wine speciality of the Slovenia Istria.

The selection of varieties: refosco (100 %), unilateral cane training
Harvest: end of September

Vinification: Fermentation in fermenters at lower temperature. 8-day contact with skin. 6-24-month maturing in wooden barrels before bottling.

Combination with food: Refosco is a very good companion for rich meat food and pelagic fish. It complements homemade prosciutto and dried meat products especially well. Refosco can also be used in cooking as a component of various foods.

Serving temperature: 14 – 16°C
 

MerlotTOPBRIČ MERLOT
wine of superior quality PAO, 750 ml

A very rich red wine with an intensive ruby red colour with brick-coloured shades. Characteristic of this wine are softer, velvet tannins that evoke gentle feelings in the mouth, combined with a plethora of aromas of raspberries, plums and blackcurrant. It has a distinct and full body with a warmth that is created by the mature presence of alcohol, it uncovers sweet and elegant tannins that will take you into a very long and temperamental aftertaste.

The selection of varieties: merlot (100 %), unilateral cane training

Harvest: beginning of October

Vinification: Fermentation in fermenters. 12-day contact with skin. 24-month maturing in wooden barrels until bottling.

Combination with food: Merlot complements dried meat products, red meat, venison, fresh cheeses and food with truffles excellently. Merlot can be also used in cooking as a component of various dishes, mainly as an ingredient in various sauces.

Serving temperature: 16 – 18°C

 

CabernetTOPCABERNET SAUVIGNON
wine of superior quality, 750 ml

A very rich red wine with an intensive ruby red colour with deep shades. Its note gives off the characteristics of the variety that is reminiscent of wild fruit and sour cherries. The note is enriched by ripe bilberries, which is the result of maturing in a wooden container. The flavour is rich with calm and velvet tannins that have a positive effect on the magnificent composition. The wine has a distinct body and a genuinely long aftertaste.

The selection of varieties: cabernet sauvignon (100 %), unilateral cane training

Harvest: mid October

Vinification: Fermentation in fermenters. 15-day contact with skin. 24-month maturing in wooden barrels until bottling.

Combination with food: The wine complements traditional and international cuisine wonderfully, from pasta to risottos to baked red meat, even venison, fresh salami and spicy cheeses such as gorgonzola and roquefort, and fantastic truffles.

Serving temperature: 16 – 18°C 

 

MalviTOPMALVAZIA BRIČ
wine of superior quality PAO (protected appellation of origin), 750 ml

A dry white wine, very characteristic of the Slovenian Istria, with a beautiful harmony between freshness and elegance. A golden-coin colour with green shades intertwines with the aromatic bouquet with a distinctive character that is reminiscent of tropical fruit and acacia blossoms. The wine is mineral-rich and surprises with the pleasant bitterness of almonds.

The selection of varieties: malvazia (100%), unilateral cane training
Harvest: mid-September

Vinification:
A shorter cold maceration of grapes, the vinification of pure juice at low temperatures in inox tanks, then maturing the wine on fine yeast until bottling.

Combination with food:
The wine complements traditional and modern creative culinary arts, namely seafood, sushi, cold appetisers, pasta with lighter sauces, food with asparagus and boiled, baked or smoked fish.

Serving temperature: 10 – 12°C

 

SensiTOPCHARDONNAY BRIČ
wine of superior quality PAO, 750 ml

A dry white wine, an elegant, pleasant composition and unique quality. Straw-yellow shades intertwine with fresh fruit notes are reminiscent of white peaches, bananas and mango, and the aftertaste is reminiscent of hazel nuts and almonds. The aftertaste is aromatic and fresh with a gentle mature finish.

The selection of varieties: chardonnay (100%), unilateral cane training
Harvest: beginnig of September

Vinification:
A shorter cold maceration of grapes, the vinification of pure juice at low temperatures in inox tanks, then maturing the wine on fine yeast until bottling.

Combination with food:
The wine is a wonderful aperitif. It is also suitable with appetisers and excellently complements pasta with seafood, soups, fish, grilled meat and vegetables, bread with various spreads and olive pate.

Serving temperature: 10 – 12°C

 

SladkiMBRIČ SWEET MUSCAT
wine of superior quality PAO, 750 ml

A sweet white wine with a great emphasis on aromatic notes and with a select and elegant flavour. The gold-coin yellow intertwines very well with the distinctive aroma and a unique bouquet that is reminiscent of exotic fruit and citrus. The aftertaste is aromatic, sweet and elegant.

The selection of varieties: moscatel (100%), unilateral cane training
Harvest: mid October

Vinification:
A shorter cold maceration, the vinification of pure juice at low temperatures in inox tanks. Juice of dried grapes of the moscatel variety is added to the wine, followed by maturing until bottling.

Combination with food:
The wine is a wonderful aperitif for everyone who likes a sweeter start to a meal. It is a bit less suitable for the main course, be goes exceptionally well with various soft cheeses, also more aromatic cheeses and various desserts using fruit, honey or white chocolate.
